March 2014 Declutter & Organize!

As you all know from my February 2014 Declutter & Organize post my biggest challenge is to be more organized, and I would like to declutter my house. Being able to find things when I am looking for them makes me happy. I used to think that I need a bigger space, more room, a larger home.  Strike that! You can live comfortably and grandly in any living space as long as you limit your possessions to the ones you actually need and love. 

It’s very easy in a busy life such as ours to let a few things slide here and there, and before you know it, you have a big mess! Let’s face it - “clutter happens” and clutter is one of the biggest time wasters of our house keeping duties. Well no more mess! I am getting back on track! 

So I have created now for March a calendar that I will share with you to help me stay focused. If you feel overwhelmed at your house, please join me in this monthly challenge.  

Here are few tips that I set for myself:
~ Work a calendar day assignment with music or something that will motivate
    you.
~ If I don’t finish the assignment, I will start again the next day with this   
    assignment.
~ Declutter with bags: trash bag, donation bag and put away bag
~ Every month create a box called 3 months (you will rotate with 3 boxes), place  
    item not used for 1 year in the box. If I don’t need it in 3 moths put it in     
    donation or trash bag.
~ Clean all areas that you declutter.

Reading is Awesome


Fresh Pickled Cucumber Salad





Fresh Pickled Cucumber Salad...stays in the fridge up to 2 months!

7-cups unpeeled pickling cucumbers sliced thin (about 7 large dills)
1-cup sliced onions
1-cup sliced bell peppers
1-tbsp salt
1 cup white vinegar
2-cups sugar
1-tsp celery seed
1-tsp mustard seed

Mix cucumbers, onions, peppers and salt; set a side. Put vinegar, sugar, celery seed and mustard seed in a pot and bring to a boil. Remove from heat and let cool for one hour. Pour mixture over cucumbers.
Put in jars and store in refrigerator. Will stay in the fridge up to 2 months :)

Makes 2 quart jars.

Please Debbie there's got to be another book soon! I can't seem to read enough of her writing. She is down to earth and I really enjoy it.

Brighten Stainless Steel

Do you know a chemical-free way to get your kitchen stainless steel appliances looking like new?


Dab any fingerprint or water splatter with a wine cork dipped in olive oil, then wipe clean with a soft (old cotton T-shirt will work) dry cloth. The wine cork's texture will buff away any buildup without harming the stainless steel, and the olive oil will impart shine.

Your kitchen stainless steel appliance will look amazing again.

Best Eggplant Parmesan


Eggplant parmesan is one of my husband’s favorite meal. To this day his mom makes him one for his b-day. Now eggplant parmesan is one of my favorite meals too, so I was able to score this recipe from my amazing mother-in-law. 
I know now days there are healthier ways to prepare the eggplant, but I make mine the way my mother-in-law makes hers, because it’s too good to try to change it.
