Quick & Easy Chicken Salad


Last night I was not up for cooking a big meal, honestly I was kind of feeling lazy. So I decided to pick up 2 rotisserie chickens. I made some mashed potatoes with corn and served the legs, thighs and wings. I always save leftover breasts for lunch the next day. 

One of my favorite simple dishes to make with the leftovers is my Quick and Easy Chicken Salad that has only 3 ingredients.  







 Ingredients:
2 leftover rotisserie chicken breast cubed
5 TBS mayo
2 TBS sweet relish 










Directions:
Mix all ingredients together, serve it with crackers or on bread.
