Chicken Tetrazzini




Ingredients

    • 2 cubed cooked chicken breasts, cooked and diced
    • 16 oz package spaghetti noodles, cooked and drained
    • 1 small sweet onion, finely chopped
    • 2 medium zucchini, finely chopped
    • 3 cans (10¾ oz) Cream of Mushroom
    • ¾ cup grated parmesan cheese
    • 1 cup of mozzarella cheese
    • ¾ cup sour cream
    • 1 teaspoon fresh parsley 
    • ½ teaspoon pepper


Directions:

  1. Cook noodles, to al dente, according to the box instructions. Drain and set aside.
  2. Preheat oven to 350 F. Finely chop onions and zucchini. 
  3. Mix in a large bowl chicken, onion, zucchini, soup, sour cream, parmesan, mozzarella, milk, parsley and pepper. Stir in cooked noodles. 
  4. Pour the mixture into baking dish. Covered with foil and bake for 30 minutes, then uncover and bake for another 10 minutes
  5. Let it rest for 5 minutes and dig in.
