Yummy Bruschetta

This is one of my favorite Italian appetizers. Have fun with it. You can serve it as a snack, lunch or salad. The possibilities are endless to this divine finger licking treat. It is so fresh, full of goodness and so easy to pull together. It makes my tastebuds jump up and down. Your family or guests will be amazed because this bruschetta is better than you will find prepared by the Italian restaurants. It is also a great vegetarian option that can be served at any occasion.

Here is what you will need:

1/4 cup olive oil
3 Tbsp chopped fresh basil
4 garlic cloves, minced
1/2 tsp salt
1/4 tsp pepper
4 medium tomatoes, diced
1/2 avocado, diced
2 Tbsp grated Parmesan cheese
1 loaf of French bread
1 Kraft Balsamic Vinaigrette Dressing sweet & complex (optional)


In a large bowl, combine oil, basil, garlic, salt and pepper. Add tomatoes, avocado and cheese toss gently. You can refrigerate for 30 minutes or serve it at room temperature. 

Cut bread into 24 slices; toast under broiler until lightly browned. Top with tomato mixture.  Add few drops to each one or drizzle with balsamic vinaigrette. Serve immediately. 

Yield: 12 servings
